Taco Legend Cassoulet

Cassoulet is a rich and comforting dish from Southwest France, and here we're giving it a fantastic Mexican twist with the addition of the Taco Legend blends to add a deep, smoky, spicy flavour! The traditional haricot beans are substituted with black beans, chorizo is used in place of Toulouse sausage, and crushed tortilla chips replace breadcrumbs.

  • 300g diced pork (belly is best) or use button mushrooms (cut in half if large) for a veg version
  • 4 sausages (any type) or use veggie sausages
  • 50g chorizo or smoked sausage or use vegan chorizo
  • 4 cloves of garlic
  • 1 tbsp tomato puree
  • 2 x 400g tins of black beans or pinto beans (or use cannellini or borlotti beans)
  • 200g tortilla chips
