Taco Legend Kathi Rolls

The kathi roll is a speciality from Kolkata (formerly Calcutta) in India. It consists of a paratha lined with a thin omelette, then wrapped around spicy chicken dressed with chutney. Here we're making a Mexican version with tortillas in place of parathas, a chicken fajita filling and a fresh chopped onion salsa.

Shopping List

  • 500g diced chicken (thighs are best) or use meat-free chicken style pieces
  • 1 onion - ½ thinly sliced, ½ finely chopped
  • 1 clove of garlic - finely grated or crushed
  • 1 chilli (any colour) (optional) - finely chopped
  • 10g bunch of coriander - roughly chopped
  • 1 pepper (any colour) - thinly sliced
  • 1 lime
  • 4 eggs (any size)
  • 1 tbsp tomato puree
  • 4 large tortillas or wraps
