I was just heading out to the kitchen to start making Mexican bits for dinner - from the Legends cookbook, obvs! - when this new recipe popped up in my emails. It's Monday tomorrow (boo!) and as I was about to prep food anyway, I thought, 'Why not?' and made this so I've something tasty for tomorrow night, when I won't fancy cooking. The restraint it has taken not to scoff it tonight, though...it's soooo tasty. My husband came to investigate just from the smell. If we were planning anything less tasty than mushroom quesadillas and esquites tonight, it would have to be scrapped. Easy, ingredients you'd often have at home, quick and delicious - a fab recipe, thanks, Spicery!

Really tasty and easy to make. Decided to have the bacon version and used a smoked bacon so it had a great smoky taste.

As working parents getting children fed efficiently in the week can sometimes be a challenge - so Mac & Cheese is usually a go-to meal. What a fantastic variation. We were big fans of the Curry Legend version and this Mexican twist is just as good. Will be having plenty more of this! Thank you Spicery. Can't wait for the Mezze Legend version!!
