This moreish dish from Southwestern USA takes all the classic elements of a taco - beef, tomatoes, corn, chillies, onion, coriander and lime - but serves them together in a warming bowl of soup! The Taco Legend blends add a lovely depth of flavour and a bit of a chilli kick, perfect to spice up a chilly day!

  • 250g beef mince (or a mixture of beef and pork mince) or use veggie mince
  • 1 large onion
  • 2 cloves of garlic
  • 10g  bunch of coriander
  • 4 tomatoes
  • 1 avocado
  • 1 lime
  • 2 tbsp tomato puree
  • 198g tin of sweetcorn
  • 400g tin of black beans, kidney beans or pinto beans
  • 1 stock cube (chicken or vegetable) (optional)
  • Sour cream and tortilla chips to serve
