Tacofredag (Taco Friday) is a phenomenon in Scandinavia, and the result of a successful marketing campaign to popularise taco kits in the 1990s. You can find all sorts of Mexican or ‘Taco’ flavoured dishes there now, including this fabulous Tacopaj (pronounced ‘Taco Pie’) - a quiche made with all the ingredients from a taco.
