This dish, known as di san Xian, is a delicious combination of 3 favourite northern Chinese vegetables - potatoes, aubergine and peppers. They're cooked separately, then mixed together in a rich soy-based sauce resulting in a dish that works brilliantly as a side or even a vegetarian main course.

Shopping List

  • 300g potatoes (any type) - peeled and cut into small bite-size pieces
  • 1 large aubergine - cut into large bite-size pieces
  • 2 peppers (any colour) - cut into large bite-size pieces
  • 1 bunch of spring onions - thinly sliced
  • 2 cloves of garlic - finely grated or crushed
  • 2 tbsp soy sauce (any type)
  • 2 tsp vinegar (rice or white wine vinegar is best)
  • 1 tsp sugar
  • 1 tbsp cornflour
  • Oil for frying (sunflower or vegetable oil is best)
