Tiger Salad

Tiger salad gets its name from the 'stripy' appearance of the thinly shredded ingredients that go into it (and perhaps also the fiery dressing!). It's a favourite dish in the north and west of China, and the mix of fresh, raw ingredients with the garlic, sesame and chilli flavoured dressing contrast beautifully, resulting in a delicious dish to serve with any Noodle Legend meal.

  • ½ cucumber - cut into thin matchsticks
  • 1 stick of celery or use an extra ½ cucumber - cut into thin matchsticks
  • 1 pepper (any colour) - cut into thin matchsticks
  • 1 clove of garlic (optional) - finely grated or crushed
  • 30g bunch of coriander - sprigs picked and kept whole
  • 2 tbsp vinegar (rice, white wine or cider vinegar is best)
  • ½ tsp sugar
  • 2 tsp sesame oil
