  • ¼ small cauliflower (about 125g prepared weight) - broken into small florets
  • 75g green beans - trimmed and cut into 3cm lengths
  • 1 medium carrot - peeled and thinly sliced on the diagonal
  • 2 tbsp vinegar (white wine or cider vinegar is best)
  • 2 tsp sugar
  • 1 tsp cornflour or use plain flour
  • 1 tbsp mustard (any type)
