Winter Veg Lentil Soup

This month we've got a really hearty and filling meal in a bowl - sweet winter root veg cooked with lentils and lots of Curry Legend spices to give a lovely depth of flavour to this very easy dish. It's finished with a fragrant garlic butter with a pinch of MIRCHI BLEND to add a bit more flavour and fragrance just before serving.

  • 500g mixture of root veg (any type) - peeled and cut into large bite-size pieces
  • 1 onion - finely chopped
  • 2 cloves of garlic - thinly sliced
  • 10g bunch of coriander (optional) - roughly chopped
  • 30g butter
  • 1 tbsp tomato puree
  • 150g lentils (any type)
  • Natural yogurt, lemon wedges and crusty bread to serve
