Zhug is a green chilli sauce traditional to Yemenite Jews that’s now popular across the Middle East. It’s most commonly used to accompany sabich (fried aubergine and hard boiled eggs stuffed into Arabic bread) as well as many other snacks and sandwiches where it provides a tangy freshness, fragrant spices and lots of fiery heat!
