Dopiaza roughly translates as ‘double onions’ and is said to have originated in Afghanistan where it was created for a Moghul emperor whose cook accidentally added twice the amount of onions to the dish!
It’s a mild and aromatic curry that works really well with the savoury richness of aubergine.
Delicious recipe made with my daughter's allotment grown potatoes. Although I think I went a bit OTT with the chillies!
Great job incorporating your daughter's homegrown veg into this dish (even if it was a bit fiery!)

Rich and hearty. Love the dopiaza! Served it with naan, beetroot pachadi and sambar rice. All delicious.

I am a huge fan of the meat version of Dopiaza from "How to be a Curry Legend". I wondered if the vegetarian version would be as good. I am delighted to report yes it is!

This is a truly satisfying vegetarian meal. The sweetness of the onions and richness of the sauce was perfect. The potato and aubergine made it substantial enough to be a filling main dish. The lemon raita was the icing on the cake for us. We really enjoyed our weekday meat free curry and will be delving into our Veggie Table Legend book more often. Thank you guys. For us the veggies really were king this evening.
