Malai in Hindi loosely translates as 'cream', and wala is a 'trader' or 'seller', so the name of this dish is ‘cream seller’s chicken’. The creamy curry is flavoured with lots of coriander and green chilli which, as well as providing a fresh zingy flavour, also give it a beautiful vibrant green colour.

  • 4 cloves of garlic - finely grated or crushed
