This curried noodle soup is from Chiang Mai in the north of Thailand where the food is influenced by neighbouring Burma.

The addition of pickles, raw shallot, chilli oil and lime turn this mild curry dish into something incredibly delicious!

Shopping List

  • 500g diced chicken (thighs are best) 
  • 150g shallots or 1 medium red onion - ¾ roughly chopped, ¼ very thinly sliced
  • 3 cloves of garlic - roughly chopped
  • Fresh ginger - finely chopped to make 1 tbsp
  • 2 pak choi - stalks thinly sliced and leaves left whole
  • 1 lime
  • 250g dried egg noodles
  • 200ml full fat coconut milk 
  • 2 tbsp vinegar (rice, white wine or cider vinegar is best)
  • 2 tbsp fish sauce
  • 3 tsp sugar
