Description

Kolhapur, a city in the south central part of India in the state of Maharashtra, is renowned for its spicy cuisine and this delicious chicken curry is no exception. An integral part of the dish is the goda masala, a special blend of darkly toasted spices and coconut that creates a delicious savoury flavour - here we're using the Curry Legend spices, desiccated coconut and mixed seeds or nuts to make the base for this fabulous curry.

  • 500g diced chicken (thighs are best) or use meat-free chicken style pieces
  • 1 onion - finely chopped
  • 2 tomatoes - roughly chopped
  • 2 cloves of garlic - roughly chopped
  • Fresh ginger - roughly chopped to make 1 tbsp
  • 1 lemon
  • 2 tbsp tomato puree
  • 15g desiccated coconut
  • 15g mixed seeds or nuts (any type) or use extra desiccated coconut
  • 1 tsp sugar
