Spinach Poriyal

The word poriyal means stir-fried or sauteed in Tamil, and refers to a wide range of veg side dishes which are sauteed with crispy mustard seeds, lentils and chilli. In Tamil Nadu, poriyals are often finished with freshly grated coconut - here we’re using desiccated coconut, but fresh grated coconut is even better if you can get it!
