  • ½ a small onion (about 50g prepared weight) - finely chopped
  • 2 green chillies - finely chopped (seeds removed if you prefer less heat)
  • Fresh ginger - finely chopped to make 1 tbsp
  • 2 limes - peeled (discarding any white pith) then cut into small bite-size pieces
