Miris Malu Curry

Miris malu translates as chilli fish from Sinhalese - this vibrant red Sri Lankan curry gets its name and colour from the addition of plenty of dried chilli (a Portuguese contribution to Sri Lankan cuisine).

Shopping List

  • 2 large mackerel - cut through the bone into small steaks (or use 600g firm fleshed fish fillets cut into bite-size pieces) 
  • 1 red onion - finely chopped
  • 4 cloves of garlic - finely chopped
  • Fresh ginger - finely chopped to make 2 tbsp
  • 1 lemongrass stalk - bashed with a rolling pin then cut into 3cm lengths
  • 1 lime
  • 2 tbsp tomato puree
  • 200ml full fat coconut milk
