Dhansak curry originates from the Parsi community in Mumbai, where the characteristically sweet and sour flavour usually comes from the addition of tamarind. In British Indian restaurants the tamarind tends to be replaced with pineapple which adds texture and a lovely sweetness to this simple dish.

  • 500g diced lamb or chicken
  • 1 large onion - thinly sliced
  • 2 cloves of garlic - finely grated or crushed
  • Fresh ginger - finely grated to make 1 tbsp
  • 10g bunch of coriander - finely chopped
  • ½ lemon
  • 400g approx. tin of pineapple in juice - drained, juice reserved and cut into bite-size pieces (or 200g fresh pineapple with 2 tbsp sugar and 1 tbsp vinegar in place of the reserved juice)
  • 1 tbsp tomato puree
  • 100g red lentils
  • 1 tbsp sugar
