One of my favourite rice dishes to date. Loved the hint of coconut with the occasional crunch of a toasted cashew! Works really well with the family staple brown rice. Lovely accompaniment to a curry

This is my second time of making South Indian Coconut Rice. The first time I used the flaked almond suggestion, which was great. This time I tried the alternative suggestion of using cashew nuts. It too is really savoury and tasty.

I really liked this simple rice dish. It makes an interesting change from plain rice. The coconut and fried nuts give a satisfying savoury edge. I used the flaked almond suggestion, next time I'm going to try the cashew nut version.
