Trini Doubles

Trini Doubles are a street food from Trinidad, consisting of 2 baras (fried flatbreads) and channa (chickpea curry) plus a tangy chutney on top. It's likely to have originated from a northern Indian dish called chole bhature, but is now a signature taste of Trinidad, and often eaten for breakfast or as a late night snack!

  • 1 onion
  • Fresh ginger
  • 1 cucumber
  • 2 limes
  • 20g bunch of coriander or parsley
  • 180ml milk (any type)
  • 2 x 400g tins of chickpeas (including all the liquid from the tins)
  • 1 tbsp tomato puree
  • 250g self-raising flour
  • 1 tsp sugar
  • Oil for deep frying
  • Hot pepper sauce or chilli sauce (any type) to serve
