Asparagus & New Potato Ishtu

The word ‘ishtu’ comes from the English word ‘stew’, and refers to a creamy, coconutty dish popular across South India. Ishtu can be made with all sorts of different vegetables, but here we’ve gone for some fantastic spring favourites - new potatoes and asparagus - for a fresh and really satisfying combination.
