Description

This month we've got an early autumn vegetable feast, with a sweet and sour brinjal (aubergine) dhal as the centrepiece. Aubergines are extremely popular across India, and their soft texture really lends them to being slow-cooked - as here with lentils, onions and our Curry Legend spices - to make a rich and satisfying dhal.

I love aubergines, so I was fairly certain this was going to be a winner - but, oh my goodness! Really easy, and so tasty. I had most of the ingredients in my storecupboard anyway, so I only had to buy the aubergines and coriander (my plant was deplete) - so it was a pretty cheap meal too. I don't think I've seen a meal disappear so quickly and in such silence in a very long time. Highly recommended. We will definitely be cooking this one again!

Easy recipe to follow. A great vegetarian meal that is full of flavour, has a bit of 'kick' but is not to spicy hot. I used split red lentils and that worked fine. A very tasty meal that is also good value. Well worth a try !

I love a good Dhal for my working lunches and this one certainly makes the grade. The Methi blend really adds something to the lentils - as I usually just include Haldi this was a lovely change. Plus any excuse to get an Aubergine fix in. Keeps me filled up until tea time!
