Caribbean Run Down

This dish is usually cooked in huge pots for street parties - its name comes from the way the oil in the coconut milk sinks to the bottom of the pot during cooking. It’s a delicious stew of chicken, root veg and bananas in spiced coconut milk, topped with little dumplings known as spillers.
