  • 1 medium onion - thinly sliced
  • 2 cloves of garlic - finely chopped
  • Fresh ginger - finely chopped to make 1 tbsp
  • 200ml full fat coconut milk
  • 50g unsalted cashew nuts
  • 2 tbsp vinegar (white wine or cider vinegar)
