Shopping List

  • 1kg mixture of root veg (eg parsnips, carrots, beetroot, sweet potatoes etc)
  • 1 red onion
  • 2 cloves of garlic
  • 10g bunch of coriander
  • ½ lemon
  • 2 tbsp tomato puree
  • 20g cashews, flaked almonds or desicated coconut
  • 400g tin of chickpeas
  • 200ml coconut milk (full fat is best)
