Courgette Kadhi

Kadhi is the name of the yogurt and gram flour based curries popular in the north and west of India.

This version is from Gujarat, and as many Gujaratis follow Jain vegetarianism, this dish is not only free from meat and fish but also excludes onions and garlic.
