Mixed Veg Curry

This classic curry house veg curry is the traditional accompaniment to a biryani but it also makes a great meal served simply with plain rice.

You can use pretty much any mixture of veg you have lurking in the fridge or frozen mixed veg works a treat.

Shopping List

  • 1 large onion - roughly chopped
  • 2 cloves of garlic - roughly chopped
  • Fresh ginger - roughly chopped to make 1 tbsp
  • 1 large carrot - peeled and cut into bite-size pieces
  • 250g mixed veg (eg cauliflower, peas, sweetcorn etc (fresh or frozen)) - cut into bite-size pieces if large
  • 25g butter
  • 1 tbsp tomato puree
