Rajasthani Panchmel Dhal

Panchmel translates as five (panch) mix (mel), with this nutritious mixture of chana, urad, moong, toor and moth lentils creating a variety of flavours and textures.

However, if you can’t get hold of all these lentils then a supermarket dried soup mix makes a great substitute!

  • 2 tomatoes - finely chopped
  • 1 green chilli - halved lengthways
  • Fresh ginger - finely chopped to make 1 tbsp
  • 2 cloves of garlic - thinly sliced
  • ½ lemon
  • 25g butter
  • 200g mixture of 5 different lentils or pulses, or use dried soup mix
