Karahi is the Hindi name for a pot, similar to a wok, in which this dish would traditionally be cooked.

Cooking the onions, peppers and chillies until really soft and sticky brings out the natural sweetness of the vegetables, resulting in a really delicious dish.

  • 2 onions - thinly sliced
  • 2 peppers (any colour) - cut into bite-size pieces
  • 2 red chillies (optional) - thinly sliced (seeds removed if you’d prefer less heat)
  • 2 tomatoes - cut into wedges
  • 10g bunch of coriander (optional) - roughly chopped
  • ½ lemon
